French nationals Cyril Claudel and Nicolas Blasco are taking over SA COVA and relaunching it as a French Bistro, opening in April of 2015.In Ibiza town on a terrace overlooking the Dalt Vila (designated by UNESCO as a World Heritage Site), Sa Cova will serve classic French Cuisine and a curated wine and aperitif list paying homage to both France and Spain, while offering breathtaking views of the Old Town. In addition to the intimate outdoor terrace, Sa Cova will also offer bar service inside one of Ibiza’s caves, a topographical feature that the city is well known for.Restaurants and Hospitality has always been a passion for Cyril and Nicolas. From a very young age, they have both experienced being around food, Cyril through his parent’s restaurants in Normandy and Saint-Tropez peninsula and his grandparent’s bakery around Paris, and Nicolas from being exposed to mother’s traditional (and excellent) cooking and by just being exposed to quality products and ingredients during his childhood. Since they met in 2003 they embarked on careers that would take them to Saint-Tropez, Paris and New York where they would train under the direction of some of the best names in the industry in those respective cities. Their passion and attention to detail can be credited to their appointments in various Michelin starred restaurants and Relais & Chateaux, and Leading Hotels of the World properties that they had both worked in. Their experience in private “members only clubs” and trendy high profile and high volume restaurants ensure that they were always on top on innovation when it came to service and stylistics of the restaurant. In 2011, they moved to Ibiza for a “Better Living” and to follow another one of their passions... Music and immediately fell in love fell with the island and its people. It is there where they worked at Ushuaia where they catered to ultra VIP’s and accommodated their very demanding requests. Opening a traditional bistro has always been a dream for Cyril and Nicolas. When the opportunity presented itself to take over Sa Cova, Nicolas and Cyril did not hesitate. “We have always wanted to create a space for family, friendship, and sharing. There is no place better to celebrate all this than in a bistro setting in an outdoor patio on a warm summer night” says Cyril. “We want to create an atmosphere of love, not only with the people who may come but also a love of the terroir, as manifested in our food and in our wine selections” he continues.Cyril has created a seasonal classical French menu that pays homage to the cuisine that he grew up with such as Pâte de Foies de Volailles, Harengs Marines, Blanquette de Veau, Cassoulet, Petit Sale aux Lentilles, and will offer Sa Cova’s signature dish L’onglet with Gratin Dauphinois. And Nicolas, from his experience managing numerous prestigious wine lists and cellars that he has worked in the past, will curate a list of his personal favorites from the his native France and his adopted country Spain such as traditional aperitifs from Lillet to Pastis and Cidre, and handpicked wines such as Bouvet Saphire Saumur Brut, Bourgogne Frederic Magnien, Rioja David Moreno.
