So, our Restaurant couldn’t have anything else than a gastronomic proposal of the recipes from our beloved city but with that personality that we have as cats. Loyal to its philosophy, Indigo rescues the real recipes from Madrid and its Chefs, Ricardo Robles and team, who use typical Spanish recipes and turns them into an experience for you and your five senses. The best ingredients and tastes will form part of this savory menu but always with that scoundrel blast of our awesome chefs. Also, each and every one of our items will be served in two different sizes for your convenience: XL or in its “tapa” version just to get like a snack or to share. Some of the most famous starters of the new menu will be: “Algo de Torear”, which are little rolls filled with bull tail and candied pears with a reduction of sweet wine from Madrid; “De Burgos a Madrid”, which is a sausage roll served with a base of Peppers of the Peak and melted goat cheese; “Te contaré un secreto” ( Iberian fingers wrapped in crispy corn served with two sauces) ; “El huevo de Oro”, farm egg accompanied by a boletus and truffle cream sauce, oil and a savory focaccia; “Te apetecerá” Iberian soup with 65º egg, parmesan cheese and baby vegetables. Sea and land will also find themselves in the 0 km. in our plate “Bacalao confiado” (Confit cod with carabineer sauce with cream potato). Another dish you could try at our restaurant is “Tradición con guiño latino”, pork ribs roll slow cook with rum served with roasted wheat.
