The Restaurante Amaya has been welcoming guests since February 2016. New world cuisine is the order of the day, offered by proprietor Tobias and with his head chef in charge of the kitchen. The cooking of the Mediterranean is the main source of inspiration, complemented by and combined with classic and traditional recipes with influences from all cultures. The cuisine of the Amaya seeks to provide taste experiences on the basis of a willingness to try new flavours and a desire to discover unexpected and previously unknown nuances. Our dishes consist mainly of fresh, seasonal produce from local markets. Everything on our menus is homemade and freshly prepared from scratch every day. The Amaya’s evening dinner menu offers, for example and depending on the season - Snapper ceviche with Mango Papaya vinaigrette, Kaffir lime syrup infused pineapple and Jalapeno sauce - King prawns with Daikon salad, sweet potato puree and Tiger’s milk foam - Warm cauliflower soup with Green tea tapioca, pickled walnuts and Mistella wine infused pears - Poached Foie gras with Chestnuts puree, seasonal mushrooms and Kombu broth – Sea bass with Moscow Mix, marinated potatoes, coconut- coriander sauce and mushrooms - Lamb cooked in three ways with lentils salad, roasted shallot puree and home made cumin yoghurt – Raspberry cremeaux with Sablee biscuits, Raspberry soup, lime cream and merengue chips – Chocolate ice cream with figs & red port wine sauce, Green shiso and Figs & nuts salami. The Amaya's menu includes three starters and main dishes, based on fish, meat and vegetarian cuisine respectively. Certain dishes and desserts (and cakes in particular) are suitable for vegans and also lactose- and gluten-free. The Amaya has a classic ambience. Stylishly furnished with contemporary influences, it is located in the heart of Santa Catalina. This ambience goes well with the new world cuisine on offer. An antique stone floor, a ceiling lined with more than two hundred original Majorcan window shutters, dark green tiles from Morocco behind the bar and tasteful interior decor with authentic, high-quality furnishings and fittings give the restaurant a real big-city flair. Many of these fixtures and fittings have been recovered from old buildings and recycled and restored for use in the Amaya. Diners sit at elegant brass-top tables laid with high-quality crystal and silverware, and fine porcelain from renowned traditional suppliers. The Amaya is ideal for celebrating special occasions and also for business entertainment.
